Kolios Persefoni

Persefoni is made from the Xinisteri grape, one of several varietals that is indigenous to Cyprus, and like the other indigenous Cypriot varietals such as Maratheftiko, Spourtiko, and Mavro, among others, it is absolutely unique in the world. After thousands of years of cultivation in the local soil and climate, Xinisteri and the others have evolved a very special character. The high quality wine produced from them boasts a very full body with very delicate yet intense perfumes.
Kolios Winery produces two versions of Persefoni, Dry and Medium Dry. The Dry version is not overly dry, and the Medium Dry version gives just a touch of sweetness over the Dry version.
The label name Persefoni is taken after the name of the grandmother of Marios Kolios, in honor of her memory. Persefoni is also a Greek goddess, the daughter of Zeus and Demeter, and wife of Hades. She is associated with Spring and vegetation fertility. A perfect name for this award winning wine!
The Kolios Winery and the Kolios family vineyards are located on a mountaintop in the southern forest terrain of Cyprus, at an altitude of 3300 feet (3000 meters), in the Pafos district. Here the climate, soil conditions, self-rooted, non-American rootstock vines, and other factors give the grapes and the resulting wine its unique character. All Kolios wines are wild yeast fermented, using the natural local yeast, not a packaged or engineered yeast.
TASTING NOTES: It’s attractive bright color with green reflections is accompanied by flavors of exotic fruit hints and peachy overtones, with a balanced acidity.
FOOD PAIRINGS: Excellent with seafood, particularly scallops and shrimp, white meat, pasta, fruits and nuts.
SERVING TEMPERATURE: Best served chilled.
